The day begins at eight o’clock with breakfast comprising tropical fruits, brown bread, cake, chocolate, coffee, and fruit juice.
- Then a tour through the cocoa fields. Participants will learn to understand the whole process of:
- organic fertilization
- other agroecology care as required for the production of organic cacao.
At lunch break, cocoa is marking its presence as well. There will be cocoa in salads and desserts.
Then we will harvest cacao fruit, select fruits to be broken, extracting cacao honey from the fruits, remove the pulp and explain the process of cacao seed fermentation.
In the afternoon we will have a short introduction to the option-2 program, followed by a time to chill.
- The day begins at eight o’clock with breakfast comprising tropical fruits, brown bread, cake, chocolate, coffee, and fruit juice. Then we put our hands in the dough, or better in the already fermented and dried cocoa seeds. We go through elements such as:
- roasting cacao seeds
- prepare cocoa nibs
- use the pestle to make a dough
- make handmade chocolate
- learn about recipes.
At lunchtime, we will enjoy the result of the lessons by tasting the delights that only cocoa can offer us, as part of a fine meal.
In the afternoon we can have a short introduction to the option-1 program, followed by a waterfall bath to spend some of all the energy that the chocolate gave us. We always finish the day with time to chill.
We charge R$ 20 more per person if seminar options 1 and 2 have to take place in two adjoining days.
